I can has do-over?
I lost a weekend and I want it back.
Saturday was the sausage prep for 12th Night, which
count_gunthar went into on his LJ, so I won't. Sunday morning, I woke up not too terribly late, only to have my massage therapist call and cancel my appointment for noon because she has a horrible cold (thank you for not inflicting it on me, honest). I wasn't terribly disappointed becase 1) I had a slight headache and 2) it meant we actually had a Sunday with no commitments. Do you know how rare those are?
Then the suckage begins. Said headache gets progressively worse, despite going back to bed for an hour AND taking meds, until it becomes a migraine and I'm a lump on the couch. And it wasn't the headache that was the problem. The migraine wasn't a full-blown one, and the pain would have been manageable except for the extreme nausea that came along with it. It also didn't help that Gunthar was cooking and packaging the first batch of sausage and the smell was contributing to my stomach woes. I spent all day on the couch in absolute misery.
Gunthar finally got an apple and some tea into me around 10pm, but the combination of the headache, the nausea and some RLS made sleep impossible. I think I managed 2 hours or so before the alarm went off. Needless to say, I ended up staying home yesterday and finally felt okay enough to eat something about mid-afternoon.
The missing sausage casings arrived yesterday (thanks UPS for scaring the crap out of me and the cats), so Gunthar and I finished processing the sausages last night. The new casings were a little bigger and easier to thread onto the filler attachment, and we managed to make 122 sausages in about 2 hours. I don't even want to look at them again until 12th Night next month.

Now, I don't know if there were nitrates or not, but it's a thought.

The casings are packed in purified salt.
The sausage itself was made from unprocessed beef chuck (24 lb roast), fresh pork shoulder (2 11 lb roasts), 5 lbs of uncured smoked bacon, kosher salt, marjoram, sage, white pepper and about a pound of pork fat.
Besides, she only had a bite of one to test it. Unless she was majorly sensitive to nitrates, there shouldn't have been enough to really bother her.
But nitrates are a good guess.
